Deborah C asked:
butter between the skin and the meat… so I did, now my turkey is looking burnt red in sploches… I am cooking it at 350. Is this ok? Or is my turkey now going to be burnt inside too? I don’t want to take it out of the oven for another 40 minutes… if I do I will let all the heat out of the oven… then I will have to cook longer… ugh. its a 22 lb turkey.

First, Happy Thanksgiving! Second, a bird that big will bake for well over 4 hours. I have a 16 pound bird in, and it will bake for 4 hours. If the skin gets too colorful, cover the bird loosely with foil. (Like a “tent”) I am cooking mine at 325, just so it doesn’t get too brown too fast.

Don’t worry, the splotches probably aren’t burnt. They will have lots of great flavor. It won’t be burnt inside.
As the rest of the skin browns, the color should become more even and you’ll realize those splotches aren’t that dark. In real life, though, turkeys don’t always have an even color and may have some splotches. It’s all fine.
Try melting a little butter and brushing it on the outside of the skin. This will help it brown up for you and even out the color.
If you are absolutely certain that your bird is getting too brown, then put some loose foil over the surface for the remainder of the cooking time. Don’t close it in, just protect the skin from getting more direct heat.

try covering the turkey with Aluminum foil. At 350 It should not burn as long as you baste it every so often, (once an hour)
As long as there is liquid in it . It should not burn.
